Madeleines are one of our favourite recipes to make as an after snack or when guests pop by without notice as it is super quick to make and I always have lemon and the other ingredients at home. If you are wondering, Madeleines are tiny buttery French sponge cakes traditionally baked in scallop-shaped Madeleine moulds. These are made with sugar, flour, melted butter and eggs and often flavoured with chocolate, lemon or almonds. Sometimes they are also dipped in chocolate and have icing sugar sprinkled on them.
These little cakes disappear quickly in my house and they are best eaten warm. By now you would have realised I am a huge foodie and love my food, so it is no surprise that my daughter is actually named after these tasty little cakes.
I first saw Michel Roux Jr making this recipe on BBC’s Good Food Show and told myself I had to make it myself and I not stopped! I love Michel and his French themed recipes never fail to impress me. If you have the Madeleiene mould lying around the back of the cupboard, it is time to dust that and try this easy recipe which is super yummy.

Ingredients
- 2 Eggs
- 100g Flour
- 100g Butter (melted)
- 1 Lemon (juice & zest)
- 3/4 tsp Baking Powder
- 100g Castor Sugar (I use 90g)
Instructions
1. Heat oven to 200C and brush the Madeleine tray with melted butter then dust with flour (You must do this to avoid the Madeleines sticking to the tray).
2. Whisk eggs and sugar in a bowl until frothy.
3. Lightly whisk in the remaining ingredients ie melted butter, lemon, juice and zest.
4. Fold in or whisk in flour and baking powder. Leave to stand for 20 minutes before pouring into the prepared Madeleine tray. I use a table spoon for this.
5. Bake for 8-10 minutes until cooked through. You know when they are done when you press them and they bounce back into shape.
6. Transfer the Madeleines to a wire rack and leave for a few minutes to cool slightly. These are best eaten warm but still taste as good cold.

I have only had one tray and they have lasted me for over 8 years now
I ain’t no baker. But one day I saw Michel Roux jr. on TV making these wonderful Madeleines. Then I decided to try them myself. It’s the easiest bake I have ever done. Totally delicious in particular with the hint of lemon. Foolproof recipe and so quick to make! The tray was very cheap.
Agree, I still make this for my children, takes me 10 minutes to make them and another 8 minutes to bake them. Light and tasty
