
I love making sausage rolls and always have a batch in my freezer as a quick after school snack or when I have friends popping in for a cuppa. I also make many different versions and sometimes make my own shortcrust pastry as well. This particular sausage roll recipe is made with puff pastry and slightly sweeter due to the inclusion of the tomato ketchup.
Feel free to omit the tomato ketchup if you prefer a more savoury option. If you are using sausages meat then you don’t need to season the meat or include the egg. Just add the sausage meat on the pastry.
There is no right or wrong to the choice of filling, just keep making it until you find a filling which you and your family enjoy. This tasty recipe is a quick version which I make when I have left over mash and pork mince make and they also freeze well.

Ingredients
- 350g Pork Mince (You can also use sausage meat)
- 1 packet All Butter Puff Pastry (2 x 215g)
- 1 Red Apple, grated
- 1 medium sized onion, grated
- 2 medium sized potatoes, boiled and mashed (or leftover mash)
- 1 egg yolk or 1/2 an egg
- 2-3 tsp Dijon Mustard
- 1 tbsp tomato ketchup
- Salt & Pepper
Instructions
1. In bowl mix in the pork mince, mashed potato, tomato ketchup, grated apple and grated onions

2. Add egg yolk, salt, pepper and mix well

3. Depending on your preferred size, cut the puff pastry into two or three and then spread a little mustard

4. Shape the pork mince into log shape and then brush pastry with egg wash and roll it

5. Cut into preferred size, snip the top with scissors and egg wash the pastry

6. Bake in a 200C pre-heated oven for 20-25 minutes. If you are planning to freeze these rolls, just bake it for 20 minutes then cool it completely and then store in air-tight container in the freezer. Reheat at 200C for 10 minutes from frozen.

Notes
Note:
- If using sausage meat, you don't need to add grated apples, seasoning or egg. Just pick your favourite sausage meat flavour and fill it in.
- Omit tomato ketchup if you prefer a more savoury filling

We love homemade sausage rolls, I made them with my granddaughter when she stayed a few weeks ago, I have never put apple in them though so may try this next time
