Chinese Ginger Chicken Stir-Fry Recipe

This is a tasty and nutritious Chinese Ginger Chicken stir-fry recipe which is good to make on cold nights, when you are having a cold or you can also cook it for confinement cooking and serve to pregnant women who have just delivered a newborn baby as it has lots of ginger in it. You can also substitute the chicken for mined pork, I have also cut my meat a little larger, you can make it smaller.

This is my mum’s recipe and she cooked this for me during my confinement as I followed the Chinese 30-day ‘pantang’ or confinement period whereby new mums are to rest and avoid any physical work. Mum also emphasized that you should not use normal vinegar but the only black sweet vinegar  for confinement as the flavour is not sharp.  If you don’t have the sweet black vinegar then just omit it. She cut the chicken into smaller pieces, I have added larger pieces for the kids. The Wolf/Goji Berries is also optional, if you can’t find it, you can omit it.

As you can see my mum went into a lot of effort to make delicious food for me when I was recovering after the birth of my children. This recipe can also be cooked on a cold winter day as ginger is known to keep the body warm.

Ingredients

  • 4 Diced Chicken Thigh
  • 6-8 Slices Of Ginger, julienne
  • 1-2 tbsp Sesame Oil
  • 3/4 cups D.O.M Benedictine (or 2 tbsp Brandy)
  • 1-2 tsp Ginger Juice
  • 1/2 tsp Dark Soy Sauce
  • 1/2 tsp Light Soy Sauce
  • 2 tbsp Chinese Cooking Wine
  • 1 tbsp Chinese Black Sweet Vinegar
  • 1/2 tsp Sugar
  • Handful Wolf Berry/Goji Berry
  • Coriander Leaves

Instructions

1. Lightly marinate the chicken pieces with Fresh Ginger Juice, Dark Soy Sauce, Light Soy Sauce; 1 Teaspoon Sesame Oil, DOM/Brandy for at least 15 minutes to an hour in the fridge.

2. Preheat frying pan with 1 tsp sesame oil and saute shredded ginger till fragrant and slightly golden in colour.

3. Add in marinated chicken and stir-fry till slight brown.

4. Add in Chinese cooking wine and simmer on low heat (cover) until chicken is cooked through.

5. Turn off the heat, stir-in wolf berries/goji berries and extra drizzle of sesame oil (optional) and chinese black sweet vinegar (optional).

6. Top with coriander and served with steamed white rice
