This is an easy recipe to make on a busy weekday especially if you have leftover roasted veg and meat from your Sunday Roast dinner. You can keep the recipe as a vegetarian dish or add in leftover roast meat as well. In this case, I have used leftover turkey meat from my Christmas meal and boiled potatoes and carrots. This recipe was given to me by my mum, when I was struggling to feed my daughter who was about 2 years old and sometimes being fussy with food. Now, I make this whenever I need a light lunch/dinner for the whole family. Add in extra milk, if you want a softer loaf. Ingredients
- 3 medium potato
- 1 carrot
- 1 cup Cooked chicken/turkey meat
- 2 eggs
- 1/2 cup oil
- 1/4 cup milk
- 1 cup Greek yoghurt
- 1 cup plain flour
- 1 tsp baking powder
- 1/2 cup chopped herbs (parsley, coriander/cilantro or dill)
- salt & black pepper
Instructions
1. Heat oven to 165C and boil the potatoes and carrots in a pot for 20-30 minutes until tender. Do not overcook as you still want it to hold the shape. Cool then peel and chop the potatoes and carrots into bite size. You can also use leftover roasted vegetables for this.
2. In bowl whisk the eggs, oil, yoghurt and milk (I've added 1/4 cup you can add in slightly more if you like a softer loaf)
3. Stir in flour and baking powder
4. Add in the carrots and potatoes. I have at this point also added in some leftover turkey meat and then followed by the herbs, salt and pepper
5. Mix it all together, add in more milk if you need. The pour into buttered baking tray (I have used 9"x6")
6. Bake for around 45 minutes until the top is nice and golden in colour. Serve warm with salad on the side.
