How to Make Easy Christmas Mince Pies

Mince Pies are little sweet tarts of English origin which is filled with a mixture of dried fruits and spices called “mincemeat”, that is traditionally served during the Christmas season.  When I first heard mince pies, I immediately thought it to be a meat pie but I was so wrong. These mince pies are fruit-based and very commonly found in England and purchased in mass bulks from the supermarket and enjoyed with a glass of mulled wine at Christmastime with family and friends.

I have shared a quick and easy recipe on how you can make the pastry. The filling can be easily purchased in ready jars. I have used Robertsons’ Classic Mincemeat which reminds my husband of his childhood. You can use a richer or more luxurious filling from other brands. The filling can be made from scratch, but the ready-made ones are as tasty and will save you time.

This recipe is from Congleton Learning Centre where I attended a cooking class some years back. I am always reading cookbooks and attending cooking classes as I find that I often learn something new.  I have used special mince pies baking trays here but you can also use muffin tins or tart shells and it does work the same, just make them smaller.

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 560g mincemeat
  • 12oz (350g) plain flour
  • 6 oz butter or baking margarine
  • pinch of salt
  • water
  • milk
  • icing sugar

Instructions

1. Weigh ingredients, sift flour, add salt

2. Rub butter into flour to make a mixture which resembles fine crumbs

3. Add just enough water to bring dough together

4. Chill dough in a polythene bag in the fridge for 10 minutes

5.Roll pastry thin and cut using a 7cm cutter to fit the base of the mince pie baking tray. Cut smaller circles (6cm) or stars to decorate the top of the pie

4. Grease tins and place the larger circle at the bottom and fill these with mincemeat to the level of the edges of the pastry

5. Dampen the edges of the smaller rounds of the pastry with water and press them down to form lids, snip the top three times with scissors or use star shapes. Brush pastry top with milk.

6. Bake near the top of the oven of 10-15 min at 165C till golden brown. Cool and dust with icing sugar. You can also freeze the piece once cooled. Thaw and reheat before serving.
