Moist and Delicious Carrot Cake

I love Carrot Cake as it is one of the most moistest and moreish cake to eat and I also feel like it is really healthy as it has carrots, raisins and walnuts in it that I don’t mind having a slice for breakfast.

Here’s an easy recipe for you to make at home, I have reduced sugar in this recipe as well as omitted raisins as my children are going through a phase where they don’t like raisins. I have also doubled the recipe to make two loaf cakes as I gave one to a friend.

If you notice, my cakes rarely have icing on them, but I tend to ice my carrot cake with cream cheese icing.  This icing is not very rich and you can add more icing sugar if you prefer it sweeter or reduce it according to your preference. Do give this recipe a go and let me know what you think of it.  The cake is best eaten the next day or you could also make cup cakes with these.

Ingredients

Cake

  • 2 carrots, peel & grated
  • 125g plain flour
  • 185g castor sugar
  • 150ml canola oil
  • 2 eggs
  • 1 orange zest
  • 1 tsp baking powder
  • 1 tsp baking soda
  •  ½ tsp salt
  • ½ tsp nutmeg
  • 50g raisins & sultanas (optional)
  • 50g walnuts

Icing

  • 250g cream cheese
  • 125g soft butter
  • 125g icing sugar
  • mix with a few drops of vanilla essence
  • decorations (optional)

 

Instructions

1. Heat oven to 175C

2.Sift dry ingredients - flour, baking powder, baking soda, salt, nutmeg in bowl

2. In separate bowl beat oil, egg, vanilla, orange zest, grated carrots in a mixer.

3. Then fold in raisins and flour. Do not over mix.

4. Pour into loaf tin and bake at 175C for 35-40 minutes

5. Add the cream cheese, butter and icing sugar in the bowl and beat till fluffy

6.Use piping bag, palette knife/fork to spread the icing on the cake and decorated it as you wish.

Notes

Note: I have doubled the recipe to make 2 loaf cakes. This recipes makes 1 loaf cake.

I have never made carrot cake before, it is probably the only cake I have not yet tried to make I will have to try this as looks and sounds really nice

Carrot cake isn’t the first cake I would choose to eat but I actually still enjoy it. The frosting is always a nice contrast to the cake itself x
