Spicy Dark Ginger Cake Recipe Perfect for Winter

This is a delicious and warming cake to enjoy especially during the cold winter months. I always warm my spicy dark ginger cake in the microwave for about 30 seconds and then serve it with vanilla ice-cream and the combination is just heavenly. This recipe makes two 2 lb loaf cakes or a 10″ bundt cake. The cake is perfect to bake during the winter months or to gift to family and friends.  You can also freeze the cake if you want to keep it for another time. Thaw it and then warm the cake before you serve it. The original recipe calls for molasses to be used but I have used light cane sugar instead hence my cake is lighter in shade. I also substituted buttermilk for a homemade version as I did not have that in hand.  Soon as you bake this, your whole house will smell of ginger.

This recipe is taken from book, Dessert of the Day (Williams-Sonoma) – 365 Recipes for every day of the year.  There are some delicious recipes in there and this is shared under December. What I like about the book is that it shares recipes which are seasonal each month.  So perfect if you live in the UK and want to cook and bake using local and seasonal ingredients.

Ingredients

  • 3 cups (470g) Plain Flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 tbsp ground ginger
  • 1/4 cup (45g) peeled and grated fresh ginger
  • 1 cup (250g) unsalted butter
  • 1 cup (220g) light brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup (345g) light molasses
  • 1  cup buttermilk (I've used 1 cup milk + 1 tbsp lemon juice and left it to stand for 10-15 minutes or you can add vinegar instead to make buttermilk)
  • Vanilla ice-cream or whipped cream to serve

Instructions

1. Heat oven to 180C, butter two 2lb loaf tins  or 10" bundt tin

2. In bowl mix in dry ingredients ie flour, salt, baking soda, cinnamon, ground ginger

2. Mix butter and sugar in a mixing bowl

3. Add in egg, vanilla, fresh ginger and molasses (if in liquid form) in mixer and mix till light and fluffy

4. Fold in the flour and buttermilk alternatively until all the ingredient are incorporated

5. I did not have butter milk, so added 1 tbsp lemon juice to 250ml of milk (you can add vinegar instead if you don't lemon juice)

5. Bake for 25 to 35 minutes until cooked. Cool.

6. You can freeze the cooked cake if you want. Best served warm with vanilla ice-cream.

This looks AMAZING!!!!! I don’t have ginger cake as often as I should. I’m a huge fan of ginger biscuits with a good brew… a slice of two of ginger cake would be equally as yummy! Fab recipe! Sim x
