Tasty Malaysian Coconut Biscuits Recipe

I love coconut biscuits and this used to be one of the biscuits I remembered eating from my childhood during major celebrations such as Hari Raya, Deepavali or Christmas. When I moved to the UK, I  decided to look at my recipe books as I wanted to bake a Malaysian themed biscuit for Christmas and found this recipe which my mum wrote down years ago. I tried it almost 7 years ago and have been making this every Christmas since.  I have used desiccated coconut for this, I’ve never used fresh coconut, so if you have done so, let me know in the comments.

I find that this recipe is perfect to bake 2-3 weeks before Christmas as it keeps well in an airtight jar and these taste better after a few days as the flavours get more pronounced (although I find myself often rebaking it as it gets eaten by my husband and children). This recipe is tasty and so easy to bake especially with so few ingredients.  With no eggs in this recipe, you can also make it if you are vegetarian. Depending on how large you roll the biscuits, you can easily make anywhere from 25 to 30 pieces.

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 6 1/2 oz butter
  • 4 oz castor sugar
  • 4 oz desiccated coconut
  • 8 oz plain flour
  • 1 oz semolina
  • 1/2 tsp vanilla
  • Pinch of salt

Instructions

1. Heat the oven to 200 C

2. Beat the butter till soft

3. Add the castor sugar and continue to beat it till soft and creamy

4. Next add vanilla

5. Mix in the flour and then next, the semolina

6. Add in the desiccated coconut next.

6. Bring the dough together, if it is very dry add a splash of milk, don't be afraid to use your hands

7. Take a tiny bit of the dough and roll into balls (this makes 20-25) depending on your size

7. Press each ball down with a fork to flatten the dough

8. Bake for 10-15 in the oven at 200C minutes till nice and golden. Store in an airtight container and best eaten after a few days

Ohh now this sounds like a really delicious recipe. There is something nice about settling down with a nice cup of tea and a biscuit. I shall have to try these ones.

What an easy recipe, I substituted the butter for a vegan alternative. I also added some cacao powder in about 1/2 the dough to make a couple of different biscuits for the friend who is vegan and for the other friend who cannot have dairy! Thank you for sharing.
