
This orange, banana and cranberry cake is one of my favourite recipes to make and I bake this cake often. It is a tasty and moist loaf cake to bake which filled with amazing flavours and the nuts give it a lovely texture to the cake as well. Best eaten the next day, this cake is great to serve when you are having friends over.
I have to apologies as I do not have the name of the cookbook where I obtained this recipe from. I always had the neck to spot good recipes when I go browsing in the Library and photographed this recipe on my phone almost 13 years ago in the Old PJ Library when I was brisk reading. I came home tried it, fell in love with the recipe, but never found the same book again.
Also, I am not a fan of icing so did not add the icing sugar and I have omitted the dried peel (as I did not have it at home) and increased the nuts instead. I have also used chopped almonds which have been lightly toasted in the oven and ripe bananas. So feel free to change it up according to your preference.

Ingredients
- 175g Self Raising Flour + 1/2 tsp baking powder
- 150g brown sugar (I used 100g)
- 50g minced peel, chopped
- 1 Orange (juice & zest)
- 25g mixed nuts, chopped
- 50g dried cranberries, chopped
- Juice and rind of 1 orange
- 2 eggs
- 1 tsp vanilla
- Pinch of salt
- 150ml vegetable oil
- 75g icing sugar
Instructions
1. Heat oven to 160C . Oil and flour a 2lb loaf tin. Add dried ingredients such as flour, baking powder, sugar, salt, nuts, dried fruits in the bowl and mix

2. In a separate bowl, add eggs, vanilla, oil and juice and use a hand beater to mix it all together

3. Add in the mashed bananas and the orange zest and whisk.

4. Fold in the flour till just combined, remember not to overmix

5. Bake for 50-60 minutes until cake is cooked. Cover cake with foil if you find the top is browning too quickly towards the end of the cooking time.

6. Drizzle icing sugar which has been mixed with water and decorate with orange rind (I omitted this step)
