Christmas Gingerbread Man Cookies Recipe

With exactly just two more weeks until it is Christmas, it is now time to start making all the cookies. I often try out different cookie recipes for Christmas but some family favourites are made every year such as my cocoa biscuits, coconut biscuits, pineapple tarts and this gingerbread man cookies which I am about to share. I can’t remember the origin of the recipe but I have made this since moving to UK.  Both my children love baking this cookie with me as they get to decorate the gingerbread man and eat it after as a reward. My family love the spice flavour in our cookies so I’ve double the spice measurements.

For the  decorations I have used a selection of ready-made icing/writing pens to deco these cookies. If you can’t find any in the shops, you can just mix the icing sugar with water/lemon juice and use that to ice yours’.  The biscuits are not sweet so a little icing on the top makes it perfect and festive.  This is indeed the perfect recipe to get children keen on baking and to create your own Christmas tradition of baking together as a family.

I have used a mix of light brown sugar and unrefined castor sugar hence my cookies are slightly darker in colour. Feel free to use white sugar if you want your cookies to be lighter. This batch makes around 45 pieces of gingerbread man..we lost count of some as they got eaten along the way.  I tend to store them in glass jars and hide them in high cupboards from the kids (otherwise they disappear quickly). These keep for two to three weeks if stored well.

Ingredients

  • 1 cup sugar (I have used half light brown and half unrefined castor sugar)
  • 1/2 cup molasses
  • 1/2 cup water
  • 1 tbsp ginger
  • 2 tsp cinnamon
  • 1 tsp cloves
  • 1 cup softened butter
  • 4 cups plain flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

1. In saucepan stir sugar, molasses, water, spices (1 have doubled the ginger, cinnamon and clove measurements as I like it stronger) and boil in low heat until sugar dissolves.

2. Remove from heat and add the butter

3. Stir till butter until it melts and cool for 15 minutes

4. Sift flour, salt and baking soda over the saucepan and mix till combined

5. Chill overnight

6. Let dough get to room temperature before rolling it otherwise dough will be hard. Also make sure you roll it between two parchment/baking paper as the dough is sticky.  Cut into preferred shape.

7. Bake at 160C for 10-14 minutes depending on the size of your cookies

8. Let cookies cool then decorate it. My children have helped to decorate mine.

I hope I’m not the only one that’s left out. I honestly haven’t tried ginger bread. This comes as a challenge for me because your recipe is so easy to make I should probably give this a try.
