
This is my quick and easy oven baked chicken recipe ala BBQ style when I am having a busy day, I prep the chicken and leave it in the fridge to marinade and just need about an hour when I get home to get the whole meal cooked and ready. I’ve used store bought BBQ sauce (about 1/2 bottle for around 10 pcs of chicken drumstick) but changed the flavour by adding other simple store cupboard ingredients which I tend to have in the house to make the marinade more flavourful. It is a tasty recipe which is super quick and easy to prepare and perfect for working mothers who are always in a rush. Feel free to make double the portion as the meal reheats well for lunch the next day.

Ingredients
- About 10 chicken drumsticks
- 1/2 bottle of Classic BBQ Sauce (Save the balance in the fridge for another day)
- 1 tbsp tomato paste
- Juice from 1" fresh ginger
- 1 tsp sweet paprika
- 1 tsp cayene pepper
- 1 tbsp worcestershire sauce
- Lemon Juice from 1/4 lemon
- 1-2 tbsp honey
- Baby Potatoes
- Broccoli
- Corn
Instructions
1. Add the chicken drumsticks in a large bowl and add in the bbq sauce, cayenne pepper, paprika, lemon juice, tomato paste and worcestershire sauce and mix it with your hands and let it marinade in the fridge for a minimum of 1 hour or overnight. If you don't like touching the chicken, add everything into a plastic sealable bag instead and mix everything inside it. Feel free to mix the marinade every few hours and also use a knife to poke the chicken so the marinade seeps into the pieces.

2. Place the chicken in a baking tray with foil (for easy cleaning) and cover it with extra foil. Bake in the oven for around 40 minutes. Feel free to baste the chicken pieces in the juices halfway through cooking).

3. Remove the foil covering and squirt some honey over the chicken and place it back in the oven (uncovered).

4. Keep close watch so the chicken does not burn. It usually takes around 10 minutes for the chicken to get a lovely colour to it.

5. While the chicken is in the oven, get the baby potatoes read by boiling it for 15-20 minutes in a pan seasoned with salt and rosemary. Once cooked, season it with salt, pepper and a dollop of butter.

7. You can steam or oven bake the corn. I have just boiled mine in salted water for about 15 minutes then brushed it with butter and placed it under the oven grill for 5 minutes.

8. I've served broccoli with my meal, again I've just boiled it in salted water for about 3-5 minutes. You can steam it instead.

9. Assemble and serve everything warm. The chicken will have a little gravy to it as well.
