Quick and Easy Tandoori Chicken Recipe

This is the perfect recipe to make if you are craving for an Asian meal but don’t want to spend too much time in the kitchen. This tandoori recipe is not only quick to prepare but is so flavourful and you can use diced chicken thigh meat if you don’t like meat on the bone.  I tend to use thigh meat as I find it moist and it tastes better. You can use the marinade on a whole chicken as well or chicken pieces (just double the marinade as the pieces are larger). This is a dry tandoori recipe and there is no sauce to it (add more yoghurt or a bit of water if you like some sauce) but adding a dollop of greek yoghurt is the perfect accompaniment to it.

I can’t remember which eBook this recipe originated from but the author of the recipe, Nighat Hussain is from Pakistan.  Hope to tag the cookbook if I find it.

This particular recipe is so versatile as you can increase or reduce the spices according to your preference and also marinate it as long as you like. Don’t be too worried about the spices, you can get them easily in the supermarket or Asian shops and they keep for a long time, so they will eventually get used up.

The original tandoori recipe recommends 2 hours of marinade time. But on a busy day, I have marinated it for just 15 minutes and it was still delicious.

You can also marinate the chicken in the morning before you head to work and bake it when you get back. The chicken will be cooked in the same amount of time you make a salad, warm some naan bread and set the table. Tip: You can substitute chicken meat for fish or prawns. Just watch the cooking time. This is perfect for outdoor BBQs too.

Ingredients

  • 1kg Diced Chicken Thigh
  • 200g Greek Yoghurt
  • 1-2 tbsp Grated Ginger
  • 1-2 tbsp Crushed Garlic
  • 1 tbsp Tandoori Spice Mix
  • 1/2 tsp Tandoori Colouring (optional)
  • 2 tsp Ground Cumin
  • 2 tsp Ground Coriander
  • 1 tsp Garam Masala
  • 1/2 tsp Chili Powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Salt
  • 1-2 tbsp Cooking Oil

Instructions

1. Mix all the ingredients together with the chicken (except lime and oil)

2. Roll the lime first to get the juices flowing then cut the lime into quarters and use squeeze 1 wedge over the chicken

3. Mix well and let it marinate for 2 hours or longer in the fridge. I have marinated this for 15 minutes before and the chicken was still flavourful

4. Place the chicken meat on a flat tray (over foil for easy cleaning)

5. Pour the oil and bake in a pre-heated oven for 200C for 15 minutes

6. Change setting to grill and continue cooking the chicken for a further 5 minutes till you get a slightly charred look.

7. Serve the chicken with the lime wedges, warm naan bread, greek yoghurt and a selection of salad.

Looks like a great chicken recipe. I will have to find out where to get Tandoori spice mix though. Let me check online and see if I could order it. I am positive that this dish would be another family favorite.

I have not been able to visit any Asian shops so have bought mine online, certain supermarkets sell them in the spice section too

I love Asian meals and I went to an Asian restaurant yesterday! Unfortunately I am vegetarian so I can’t have chicken, but i know people that would love this recipe!
