This is my go-to recipe for a moist banana and walnut bread recipe which is very much like a cake. You can use melted butter or oil, but I have always used oil as the cake stays moist. The cake is also best eaten the next day and perfect as a birthday cake if you spread some cream cheese icing on the top.  I often make this for my family when I find I have too many overripe bananas in the Summer.

The secret to making super moist banana bread is to mix your dry ingredients in one bowl and the wet in another. Next gently mix them both but remember not to over mix the batter.  My other tip will be to always use overripe bananas (the banana skin can be black or spotty but trust me, the inside will be soft and perfect).

To ripen your bananas,  keep them in a paperbag and in a warm places, or next to avocados. I have heard that some bake bananas in the oven to ripen them, but I’ve not done this before.

This particular recipe requires bread flour as it is a quick bread recipe but the texture is more cake-like. You can make cupcakes instead and bake it in the oven for 12-18 minutes depending on the size of your cupcake casings. Ingredients

  • 250g Bread Flour
  • 250g Castor Sugar (I have used a mix of brown sugar and castor and only used 180g)
  • 300g Ripe Bananas
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 80g Chopped Walnuts
  • 2 Eggs
  • 1 tsp Vanilla
  • 140g Vegetable Oil (or Melted Butter)

Instructions

1. Butter and flour 2lb loaf tin (or you can use 2 smaller loaf sizer foil tins). If you use the 2lb loaf tin, you will have extra batter for a couple of cupcakes on the side. Heat oven to 175C (fan)

2. Mix flour, salt, baking soda and the chopped walnuts in a bowl

3. Add the castor sugar to the oil to a separate bowl and beat till creamy

4. Then add in the vanilla and egg to the mixture (you can add one egg at a time). Mix it.

5. Next add the bananas (you can add it whole or mashed) and give it a good whisk till the bananas are nicely mashed.

6. Fold in flour which has been mixed with salt, baking soda and walnuts

7. Bake in the oven for 30-40 minutes till the skewer comes out clean
