
I love French recipes and this is one of my favourite recipes from Susan Hermann Loomis from On Rou Tatin which I have made many times for friends and my children’s class teachers. I find my kids love this cake as the marble effect is so attractive to look at. I have always baked and I tend to feel less guilty eating cake if I have made it as I usually reduce the sugar in my recipes. For this instance I have used just under a cup of golden castor sugar.
If you have not heard of Susan before, she is an internationally-recognized expert on food and an award-winning journalist/author. She has written nine books both food and literary, the most recent of which is ‘Nuts in the Kitchen’. She lives in Paris and a 15th convent home in Normandy and teaches hands-on cooking classes at her home. I have always wanted to visit her cooking school and hope I do someday.
Please give this easy recipe ago and again, this is something even your kids can make as I get mine to help all the time.

Ingredients
- 1 1/2 cups plain flour (210g)
- 3/4 tsp baking powder
- 3 eggs (large)
- 1 cup sugar
- 1/2 cup yoghurt
- 1/2 cup melted and cooled butter (120g)
- 90g dark chocolate chips (melted and cooled)
- A pinch of salt
- 1 tsp vanilla
Instructions
1. Preheat oven to 175C and grease a 7" round baking tin. Next sift flour, baking powder and salt.

2. Whisk eggs and sugar till light and pale yellow

3. Add the dry (flour) ,mixture into the wet (egg mixture) and add in the yoghurt, melted butter and vanilla

4. Pour half mixture the cake mixture into a separate bowl and mix in the melted chocolate to combine. You should have 2 bowls now (now with the chocolate flavour and one plain)

5. Drop alternate scoops of the batter into the tin

6. Use a palette knife and mix the batter to make a marble effect and bake for 30 minutes

7. Remove and cool, dust with icing sugar or serve with creme fraiche. I have this plain as it is.

Ohhhh this looks and sounds incredibly delicious. I’ve never had a French yogurt cake – but it reminds me of German quark cake, which is a much lighter version of the American cheese cake.
