Tasty Homemade Crispy Pork Spring Rolls Recipe

Happy Chinese New Year in advance to everyone! I can’t believe that there is just one more week to go before we usher in the Year of the Ox. This year due to the pandemic, many families will not be meeting their extended families and friends.  Nevertheless, there is no reason to celebrate it grandly at home with your immediate family.

I will be sharing with you a quick and easy spring roll recipe which you can premake and batch freeze this in your freezer to serve next week or when friend’s pop by.  I often serve this as an appetizer on the days I cook noodles or as a late night movie snack.  This is such a versatile recipe and I have used mince pork for my recipe, you can of course, substitute the meat for quorn or minced chicken or minced turkey if you prefer it. Some people may also prefer to use a combination of minced prawn meat with the pork as the filling.

This is also a great dish to prepare when you have guests around as you can prepare the spring rolls in advance and deep fry it (from frozen) when guests arrive. I’ve purchased my spring roll sheets from the Asian shop, you may be able to find this in your local supermarket under the frozen pastry section. Thaw the sheets and keep it covered with a damp cloth so it does not dry out.

Ingredients

  • 1 packet (50 sheets) Approx 6" or (15cmx15cm)
  • 500 mince pork
  • 2-3 cloves minced garlic
  • 1 small onion, chopped
  • 1/2"ginger, chopped
  • 1 small carrot, peeled and grated
  • 1 tin water chestnut
  • 1 tbsp light soy sauce
  • 1 tbsp chinese cooking wine or rice wine
  • 1-2 tsp cornflour mixed with some water
  • 1 tbsp oyster sauce (optional)
  • salt and white pepper

Instructions

1. Marinate pork with the soy sauce, Chinese cooking wine, cornflour, salt and white pepper for minimum of 1 hour or overnight in the fridge

2. In pan fry garlic, onions and ginger, add in the marinated pork cook

3. Next, add in the grated/chopped carrots as well as the water chestnut

4. Remove the vegetables then add in the mince pork and cook for 10 minutes

5. Add the vegetables back in, then add in the oyster sauce. Taste and add more seasoning if needed and cool in pan.

6. Get the sheets out, remember to place a damp cloth over the sheets or it will dry out.  Turn the spring roll sheets so the pointed tips face top and bottom. Then add 1 tsp of the cooled cooked pork mixture (don't add too much or it will burst when frying). Use water to seal the edges and roll into shape ie bottom pointed bit goes over filling, then like a parcel, bring right side over, fold then left side (sealing the area with water each time) then roll to the top (pls see the youtube video for visual of how to do this).

7. Place the spring rolls on a flat tray and freeze. Once frozen completely, repack in tupperware to be frozen.

7. Fry from frozen and serve with chilli sauce

I have used ready made spring roll skins which you can get from the frozen section, so it is just the filling you need to make from scratch
